Fried Scallions


I love green onions a.k.a. spring onions or scallions, and although there is a slight difference between each, I use them pretty much interchangeably in my cooking. This week, though I stopped by a roadside stand near Kutztown and found lovely bunches of real-for-real scallions and brought them home.

Pretty, aren't they?

Once I had them, I wasn't quite sure what I was going to do with them. I prefer the more delicate and smaller green onion because I'm not a huge fan of raw onions in any form. I just couldn't pass up those scallions, though and so I plotted their consumption for a couple days.

I decided on a not-so-healthy way to eat them, telling myself that they were fresh and so the dredging of them in breadcrumbs and frying in oil would be canceled out somehow.

Oh well, ignorance is bliss.

I have to say, scallions do not want to be done up in a standard breading; no way, no how. They are slippery little suckers that don't want to hold on to anything you put on them and so, the breading procedure was delicate and difficult at best. I didn't bother with flouring them, I simply went straight to egg wash and dipped the onion bulbs in a lovely panko and Romano breading and fried them in olive oil.

They met their demise in a decidedly delicious end. Perfectly crunchy and nutty outside with the Romano cheese and sweet and slightly crunchy inside. Don't be bothered by the long ends that won't be eaten, they really are just for show and one bite will have the eater forgiving you for that waste anyway. The only thing I would do differently when making them again (oh, because I most certainly will) is that I may actually deep fry them so they are done on all sides a bit more quickly.

Strawberry Rhubarb Smoothie



strawberry-smoothieMany people in Ontario look forward to June for the coveted union of strawberry and rhubarb in the classic, sweet and tart, strawberry rhubarb pie. But not everyone wants to take that big of a calorie hit. So with a little Live Lighter health spin, here’s a delightful smoothie recipe to satisfy your craving!


The following recipe calls for frozen ingredients. It will help you use up last year’s stock to make room for the new. If you’re using fresh ingredients, make sure to add 3-4 ice cubes to the recipe.

Strawberry Rhubarb Smoothie


Serves: 1 (20 oz glass)


Ingredients


1 cup frozen  Rhubarb, diced

1 cup frozen Strawberries, unsweetened

1/2 cup plain Yogurt

1 cup Rice Dream Original rice milk

1 serving Brown Rice Protein powder

1 tsp Honey (or to desired sweetness)


Directions



  1. Blend until smooth.

    There are many people that love the dawning of a new day--the freshness of the morning. I have to say that my favorite time of the day is just as the sun is setting--the twilight of a day. There is a restful peace in the air at that time.

    I particularly like twilight time between the months of April and October. Each month's twilight times have their own special nuance that strikes the strings in my heart with such a pang, I cannot even describe it.

    I could probably devote an entire blog just to each day's twilight sights and observations (I promise I won't though). That's how inspiring this time of day is to me.

    As we draw nearer to the first official day of summer, twilight often brings relief from the heat of the day. Twilight enters on cool calming breezes blown off the waters of the San Francisco Bay. Those breezes are always so delicious to my skin if I sit out in the garden and "just be". And on those cool wafts come the silent wings of dragonflies that swoop and dip in a canopy over the garden as they catch their evening meal on-the-wing. I love sitting under that magical moving canopy.

    Ile de France Goat Cheese


    I'm positive by now that it's no secret that my favorite cheese is goat cheese. A quick search on my blog turns up quite a few mentions of it. So, when I was offered the chance to sample and blog about goat cheese, you can bet I was thrilled. Ile de France happens to be the goat cheese I buy most often and the lovely package I received reinforced that for me.

    While I've used goat cheese in many recipes, from pizzas to tarts, my very favorite way to enjoy is is with a crusty and warm loaf of French bread, a bowl of tapenade and some good olive oil. I prefer my cheese rolled in herbs or pepper and this time I used freshly cracked garlic pepper to coat the bouchette of cheese in. It was, as always, perfection.

    Arancini


    Lest anyone think I've not been blogging due to lack of inspiration, I present Arancini to thwart those thoughts. I'm full of inspiration, creating like mad lately, but with very few opportunities to photograph and write. I also had a couple nights of 'no cooking' with meals provided by Omaha Steaks from Martin's Aunt Joan - we even had dessert with them - lovely little caramel apple tarts that were perfect with vanilla ice cream.

    This recipe for Arancini is my submission to this month's Royal Foodie Joust. Last month's winner, Núria of Spanish Recipes, offered up tomato, bacon and rice as the three ingredients for this month's Joust. My first thought was rice and beans, but let's face it, that's not exactly a winning entry in such a tough competition unless it's presented in a truly fabulous way - which I don't seem to be very adept at. My second thought was rice balls, but not onigiri, which are wonderful in their own right, but not what I was looking for. I had thought on something more Hispanic in flavor, but Arancini seemed to fill the bill for me.

    Normally Arancini is made with leftover risotto, but as my arborio rice had gone missing since the move and I didn't have the energy to head to the store for that single ingredient, I made these with regular long-grain leftover rice. They were just as delicious as the risotto kind and the kids are asking me to make them again very soon.

    Arancini
    Makes 8

    4 cups leftover cooked rice OR leftover risotto
    1/2 cup Parmesan cheese (if you use rice or if the risotto didn't have any added already)
    1 teaspoon Kosher salt
    2 large eggs
    1/2 cup cooked and crumbled bacon
    8 - 1" cubes mozzarella cheese
    2 Tablespoons water
    1 cup Italian seasoned breadcrumbs
    1 cup all-purposed flour
    2 cups thick Marinara sauce

    Combine rice, 1 egg, Parmesan, salt and crumbled bacon together until well blended.
    Form into 8 evenly sized balls. Flatten each slightly and add a cube of cheese to the center of each ball, making sure to wrap the cheese completely within the rice.
    Bread each rice ball by dipping in flour, egg wash (the other egg and water mixed well) and then breadcrumbs until well coated. Fry each in deep hot oil until golden brown. Drain well on paper toweling and serve with warm Marinara sauce.

    **The consistency of these should be like dough - they should hold their shape easily. If they don't stay together well, try adding another egg to the mixture.

    Senior couple on cycle rideCan it be that simple? Feel good and be well? Maybe. There are a few people out there that strongly believe that positive emotional and mental well-being is the secret to living a long, healthy life.


    Emmanuel Lopez, a.k.a. Motivatorman, a good friend of mine and eternal optimist who uses movies to motivate, wrote an intriguing post last week, “Who Wants to Live Forever? - Highlander“. He suggests that healthy living has more to do with a positive mindset and attitude, and creating positive, emotional energy than diet and exercise.


    Motivatorman cites several news stories covering long life and healthy living. He points out that a positive attitude seems to be a common denominator among the healthy, abnormally aged elderly found in the world’s Blue Zones.


    And from a Japan Times’ article, Emmanuel references 97-year-old author and physician, Shigeaki Hinohara’s first healthy living tip, “Energy comes from feeling good, not from eating well or sleeping a lot.”


    Although Emmanuel focuses on the importance of a positive mindset to living healthy and long, he makes sure to end his post with:


    So whether or not you want to live forever why not recognize the benefits of adapting a more conscious lifestyle. Be more aware of your lifestyle choices in the areas of diet, mindset attitudes and relationships. They all lead to a youthful and energized state of mind.

    Smoking and it’s Impact on Your Health


    You cannot buy a pack of cigarettes without seeing the warning lables, you cannot watch TV without hearing about it, you can’t claim to not understand the serious health issues that smoking will cause. No longer can people play the ignorance card when it comes to quitting smoking for their own health. Scientists, doctors and lawmakers all agree that smoking is killing people at an alarming rate. You don’t have to smoke a whole pack a day, your just as at-risk as the person who smokes 3 packs a day. Your body is constantly battling the poisons in cigarettes, which means it’s wasting energy at all times trying to stave off your addiction.


    If you stop smoking right now you will live longer, thats a fact. Every cigarette you smoke reduces your life expectancy. If you don’t know why to quit smoking, or think that if you stop smoking the withdrawals will be bad, look at the longer-termed effects if you continue to smoke. Think about the hundreds of thousands of people a year who are diagnosed with cancer just from cigarettes. There are many ways to quit smoking, there is a way that is right for you, you’ll simply have to keep trying to stop smoking until you find the method that works for you.


    Below I’m going to just 10 of the illnesses, cancers and other health conditions that smoking can either directly cause, or secondarily increase the chances of you suffering in your lifetime.

    • Chronic Obstructive Pulmonary Disease (COPD)

    • High Blood Pressure

    • Gangrene

    • Heart Attacks

    • Slow Recovery Time From Injuries

    • Increased Respiratory Strain

    All of those are either directly caused from smoking, or their likelihood of occurring is greatly increased from smoking. If you wanting to stop smoking now, this should be your wake-up call. Your life is the most important thing to you, you should do everything you can to quit smoking, whether it be  cold turkey, or using a stop smoking aid, there are plenty of reasons to stop smoking merely for yourself. Make it a selfish decision, make it a life-extending and lifestyle improving change to better yourself and live a fuller, richer life.

    Have you caught this new show on BRAVO featuring hosts Isaac Mizrahi and Kelly Rowland? If not, you need to- -there’s plenty of drama! If you remember Merlin Castell from a couple of episodes of the Janice Dickenson Modeling Agency reality show.

    Jeanie Syfu added volume to the winning look by creating sultry waves. Get the look in few short steps:



    -Apply TRESemme 24 Hour Body Foaming Mousse on damp hair from roots to ends, concentrating on the crown and around the face. Comb through for even distribution.



    -Blow dry hair upside down using a paddle brush for maximum volume.



    - Lightly distribute TRESemme Anti-Frizz Secret Smoothing Crème to prevent flyaways.



    -Using a 1” curling iron, create soft waves from root to ends.



    -Once curls have cooled down, lightly brush out. Finish with TRESemme 24 Hour Body Finishing Spray to hold the style in place.

    In the denim world, few people have the street cred or could be called a legendary figure like Michael Glasser. He’s pretty much a historical figure,” a visionary” as he likes to put it about how to fill a niche and create a demand for a product that’s as basic yet so trend-sensitive as denim. Having started Seven for All Mankind (with Jerome Dahan and Peter Koral); then creating Citizens for Humanity with Dahan again. Changing up his business model and based on his talent in vision in design, Glasser created a “dream team” for denim design and created the brand Rich & Skinny (because when you wear it, you feel that way) that creates a luxe feel and appearance with superfine fabric, body styles and unique washs that are truly one of a kind.



    Through his own formidable blue jeans/geneaology, Glasser had uncovered this missing link market for the woman who wants a designer look, but doesn’t fit into the standard, slim cut of premium jeans. After a few meetings with Cookie Johnson about the premise for this line, Cj by Cookie Johnson was born to answer that demand: a new premium denim line embracing real bodies in both fit and style.



    What’s really incredible is that this line is for all women— regardless of age, size or ethnicity. This is for the real woman— who has curves, a butt and a waist. It’s got style, comfort, and serious versatility with presentations like the “boyfriend”, “straight”, “boot cut”, “high-waist trouser” and coming for fall, the “legging” — a super skinny jean.

    Now at this point you are thinking- yeah sure, uh-huh and you are thinking what has shee been drinking. This line fits from 24-38 meaning from 0-18. This is salvation for all you ladies out there from size 12 and up. You can have a sexy, slinky, and amazing pair of premium denim that will last, wear well and make you look fantastic.

    As Glasser and Johnson have both stated, this line is about targeting the missing demographic which is the middle American woman whose average size runs 12-14 and maybe a little bigger who has curves, has a real body and deserves to have some fabulous jeans— along with the skinny girls.

    According to the Fashionologie website:

    It was speculated earlier this week that the twelve minute 60 Minutes segment on Anna Wintour, a product of following her around with cameras as early as last November, would air this Sunday, and now the program has updated its website, confirming that the profile will air this Sunday, May 17, at 7 pm ET/PT. They also released a 45 second teaser, in which Wintour calls Vogue “a glamorous girlfriend” and tells a staff member, “I just thought that was a bit banal. Keep thinking.”





    Check this out boys & girls. Worth watching or at least Tivo-ing on Sunday night!!
